Kacaba Vineyards Winery is a premium small batch winery located on prime bench land of The Niagara Escarpment in Vineland, Ontario. Smaller batch sizes assure that focus is placed on producing wine of Merit. The Winemaker’s emphasis is placed on creating wines rich in aromas, deep in color and character with velvety finishes. Kacaba wines are produced using only the finest grapes grown on the Kacaba estate or partnered grape growers from surrounding vineyards. All Kacaba Vineyards wines are award winning and sell through quickly.
All Kacaba selected clusters are hand-picked and hand-sorted prior to gentle de-steming before whole berry, small tank fermentation. As opposed to large format tank fermentation, our wines are fermented in small vessels to increase the intensity of flavor and concentration. To maintain the maximum exposure of red wine juice to skin, the ‘cap’ solid formation of skins, seeds and pips are punched down. This allows the juice to run freely over the sediment to increase the color, tannin and acid structure. Once the juice has extracted the desire amount of color and structure from the skins, it is pressed in a large bladder press, releasing all juice from the solids. It is at this point that the wine begins its long transformation in barrel.
